Raspberry & coconut chia seed pudding

Chia seed pudding is packed with fibre and protein making it an ideal snack for balancing your blood sugar and giving you energy until your next meal. The raspberries add the perfect amount of sweetness. But if you want a little extra sweetness, try drizzling maple syrup on top.


Ingredients

  • 2 tbsp chia seeds

  • 1/2 cup coconut milk

  • 1/4 tsp pure vanilla extract

  • handful of raspberries

  • shredded coconut on top


  1. Add the chia seeds, coconut milk and vanilla extract to a small mason jar.

  2. Stir to combine.

  3. Let sit overnight in the fridge.

  4. Add the raspberries and shredded coconut.

Tip: Make extra servings and store in the fridge for up to 5 days.
